  • 2 pieces ripe bananas, mashed

  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, mashed bananas, honey (or maple syrup), Greek yogurt, vanilla extract, baking powder, cinnamon, and salt. Stir well until fully blended.
  3. Lightly grease a baking dish with oil or cooking spray, or line it with parchment paper.
  4. Transfer the batter into the prepared baking dish, spreading it evenly.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes or until the top is lightly golden and a toothpick inserted comes out clean.
Cooling and Serving
  1. Allow the cake to cool for a few minutes before slicing. Serve warm or at room temperature, alongside your favorite toppings.

Notes

For perfecting the cake, you can substitute ripe bananas with unsweetened applesauce, avoid overmixing to keep it fluffy, and consider adding nuts, dried fruits, or Halal-certified chocolate chips for extra flavor. Store leftovers in an airtight container in the fridge for up to a week, or freeze slices wrapped in plastic and foil.
