Ingredients
  

Vegetable Base
  • 2 cups vegetable broth Use low-sodium broth if preferred.
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup chopped tomatoes
  • 1 cup chopped kale or spinach You can use either kale or spinach based on preference.
Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • 2 tablespoons olive oil For sautéing the vegetables.

Method
 

Preparation
  1. Start by washing and chopping all your vegetables.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onions, garlic, carrots, and celery. Sauté for about 5 minutes until the onions become translucent.
  4. Pour in the vegetable broth and add the chopped tomatoes, followed by thyme, salt, and pepper. Stir and bring to a gentle boil.
  5. Once boiling, add in the kale or spinach. Reduce the heat and let it simmer for about 15-20 minutes.
  6. After simmering, taste your soup and adjust the seasoning as necessary.
  7. Ladle the soup into bowls and garnish with your favorite toppings such as fresh herbs or a squeeze of lemon.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to 3 months. Reheat gently to preserve texture.
