Preparation
- If you're starting from scratch, cook 1 cup of rice as per package instructions, or simply use leftover rice to save time.
- In a medium pan over medium heat, add a splash of water (or a dash of olive oil if you prefer) and toss in the diced bell pepper. Sauté for about 3-4 minutes or until tender.
- In a large bowl, combine the cooked rice, black beans, corn, sautéed bell pepper, cumin, chili powder, salt, and pepper. Stir until everything is well combined.
- Lay a tortilla flat on a plate. Spoon about 1 cup of the mixture onto the center of the tortilla. Top with avocado slices and a drizzle of salsa.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom. You might want to use a little salsa to seal the edges.
- Repeat with the remaining tortillas and filling. Serve warm with additional salsa on the side for dipping.
Notes
Substitutions: Feel free to swap out the beans for chickpeas if they're more to your taste. Spinach or kale would also add a nice green touch!
