  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk of your choice)
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey You can use agave nectar as a substitute.
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 pinch salt

Preparation
  1. In a large mixing bowl, combine chia seeds, almond milk, vanilla extract, maple syrup (or honey), cinnamon, nutmeg, and a pinch of salt. Stir well until all the chia seeds are thoroughly coated.
  2. Allow the mixture to sit for about 5-10 minutes for the chia seeds to absorb the liquid and swell.
  3. After 10 minutes, stir again to break any clumps of chia seeds for an even texture.
  4. Cover the bowl and refrigerate for at least 2 hours or overnight.
  5. Once the pudding has set, give it a gentle stir before serving in bowls with your choice of toppings.

Notes

Best enjoyed after chilling overnight. Store in an airtight container in the fridge for up to 5 days. Portion in freezer-safe containers for longer storage but note the texture may change once thawed.
