- In a large mixing bowl, combine chia seeds, almond milk, vanilla extract, maple syrup (or honey), cinnamon, nutmeg, and a pinch of salt. Stir well until all the chia seeds are thoroughly coated.
- Allow the mixture to sit for about 5-10 minutes for the chia seeds to absorb the liquid and swell.
- After 10 minutes, stir again to break any clumps of chia seeds for an even texture.
- Cover the bowl and refrigerate for at least 2 hours or overnight.
- Once the pudding has set, give it a gentle stir before serving in bowls with your choice of toppings.
Notes
Best enjoyed after chilling overnight. Store in an airtight container in the fridge for up to 5 days. Portion in freezer-safe containers for longer storage but note the texture may change once thawed.
