  • 1 cup red lentils
  • 1/2 cup water For blending the lentils
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil For cooking the flatbread
  • Optional herbs and spices For additional flavor

Method
 

Preparation
  1. Rinse 1 cup of red lentils under cold water until the water runs clear.
  2. In a blender, combine the rinsed lentils, 1/2 cup of water, 1 teaspoon of salt, and 1/2 teaspoon of cumin. Blend until smooth.
  3. Place a non-stick skillet on medium heat and add 1 tablespoon of olive oil. Heat for a minute or two.
Cooking
  1. Pour a ladleful of lentil mixture into the skillet, spreading it like a pancake. Cook for about 3-4 minutes until bubbles form and edges turn golden brown.
  2. Carefully flip the flatbread and cook for an additional 2-3 minutes until both sides are golden brown.
  3. Repeat with the remaining lentil mixture.

Notes
