Preparation
- Place the peeled and chopped potatoes into a large pot. Cover them with water and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter and milk. Mash until creamy, then stir in the cheese, salt, and pepper. Allow to cool for a few minutes.
Cooking
- Preheat your oven to 375°F (190°C). Roll out your pie crust and place it into a pie dish.
- Spoon the mashed potato mixture into the crust, smoothing it out evenly.
- If you have a second pie crust, place it on top and seal the edges. Brush the top with the beaten egg for a golden finish. If you're keeping it open-faced, simply sprinkle some fresh herbs on top.
- Bake for 25-30 minutes, or until the crust is golden brown.
- Allow the pie to cool for 10 minutes before slicing. Serve warm.

Ingredient Substitutions: You can swap out regular potatoes for sweet potatoes or add in cooked veggies. Don't skimp on flavor by adding herbs like thyme or rosemary.
