Ingredients
  

For the Filling
  • 4 large 4 large potatoes, peeled and chopped
  • 2 tablespoons 2 tablespoons butter
  • ½ cup ½ cup milk
  • 1 cup 1 cup shredded cheese cheddar or your favorite
  • 1 each Salt and pepper, to taste
  • 1 each 1 egg, beaten for egg wash
For the Crust
  • 1 each 1 prepared pie crust store-bought or homemade
  • to taste each Fresh herbs (like chives or parsley) for added flavor, optional

Method
 

Preparation
  1. Place the peeled and chopped potatoes into a large pot. Cover them with water and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Add butter and milk. Mash until creamy, then stir in the cheese, salt, and pepper. Allow to cool for a few minutes.
Cooking
  1. Preheat your oven to 375°F (190°C). Roll out your pie crust and place it into a pie dish.
  2. Spoon the mashed potato mixture into the crust, smoothing it out evenly.
  3. If you have a second pie crust, place it on top and seal the edges. Brush the top with the beaten egg for a golden finish. If you're keeping it open-faced, simply sprinkle some fresh herbs on top.
  4. Bake for 25-30 minutes, or until the crust is golden brown.
  5. Allow the pie to cool for 10 minutes before slicing. Serve warm.

Notes

Ingredient Substitutions: You can swap out regular potatoes for sweet potatoes or add in cooked veggies. Don't skimp on flavor by adding herbs like thyme or rosemary.
