Ingredients
  

For the cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
For the cinnamon filling
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
  2. In a large bowl, combine the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Whisk them together.
  3. In another bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract. Scrape down the sides of the bowl.
  5. Gradually add the dry mixture to the butter mixture, alternating with sour cream. Mix until just combined.
  6. In a small bowl, mix the brown sugar and additional tablespoon of ground cinnamon.
  7. Pour half of the batter into the pan, sprinkle half of the cinnamon filling mixture on top, then add the remaining batter, topping with the rest of the cinnamon filling.
Baking
  1. Bake in the preheated oven for 30-35 minutes, until a toothpick comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.

Notes

For the best flavor, use fresh spices. Ensure all ingredients are at room temperature for easy mixing. To store, keep in an airtight container at room temperature for up to 3 days or freeze individual slices for up to 3 months. Reheat in the microwave or oven to revive its texture.
