Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
- In a large bowl, combine the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Whisk them together.
- In another bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract. Scrape down the sides of the bowl.
- Gradually add the dry mixture to the butter mixture, alternating with sour cream. Mix until just combined.
- In a small bowl, mix the brown sugar and additional tablespoon of ground cinnamon.
- Pour half of the batter into the pan, sprinkle half of the cinnamon filling mixture on top, then add the remaining batter, topping with the rest of the cinnamon filling.
Baking
- Bake in the preheated oven for 30-35 minutes, until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.
