Preparation
- Rinse the blueberries under cool water and pat them dry with a clean towel.
- In a medium bowl, combine the blueberries, sugar, lemon juice, and vanilla extract. Gently toss to coat, and set aside for about 10-15 minutes.
- In a small bowl, mix the cornstarch with a couple of tablespoons of water to create a slurry.
- Stir the slurry into the blueberry mixture and let it sit for another 5 minutes.
Cooking
- Transfer the blueberry mixture to a small saucepan over medium heat. Cook for about 5-7 minutes, stirring gently until the mixture thickens and the blueberries soften slightly.
- Serve the blueberry delight warm in dessert bowls, topped with whipped cream and a sprinkle of cinnamon if desired!
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave for about 30 seconds, or enjoy it cold. Can freeze the blueberry mixture for up to a month—thaw in the refrigerator before serving again.
