Preparation
- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes and then let it cool while you prepare the filling.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in sugar and continue to beat until combined. Add in the vanilla extract and mix well.
- Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Finally, fold in the chocolate chips gently.
Baking
- Pour the cheesecake mixture over the cooled crust. Bake for 25-30 minutes or until the center is set but still slightly jiggly.
- Once done, let the pan cool at room temperature, then refrigerate for at least 3 hours—overnight is even better!
Serving
- Lift the bars from the pan using the parchment paper, cut them into bite-sized squares, serve cold and enjoy!

For best results, ensure your cream cheese is properly softened before mixing, avoid over-mixing the filling, add a touch of lemon zest for brightness, and rotate the baking pan halfway through for even baking. These bites pair well with vanilla ice cream, chocolate or caramel sauce, whipped cream, and berries.
