Preparation
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners for easy removal.
- In a mixing bowl, whisk together the melted butter and granulated sugar until they are well combined and smooth.
- Beat in the eggs and vanilla extract until the mixture is smooth and slightly thickened.
- Sift in the cocoa powder, flour, salt, and baking powder. Stir gently until just combined. Be careful not to overmix!
- Fold in the chopped mini chocolate eggs to give extra chocolate delight in every bite.
- Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
- Press a few extra mini chocolate eggs on top of each brownie bite for a fun, festive touch.
Baking
- Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownie bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
