  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder Cocoa powder should be high-quality for rich flavor.
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup chopped mini chocolate eggs Adds extra chocolate chips.
Toppings
  • 1/4 cup extra mini chocolate eggs for topping Press these on top before baking.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners for easy removal.
  2. In a mixing bowl, whisk together the melted butter and granulated sugar until they are well combined and smooth.
  3. Beat in the eggs and vanilla extract until the mixture is smooth and slightly thickened.
  4. Sift in the cocoa powder, flour, salt, and baking powder. Stir gently until just combined. Be careful not to overmix!
  5. Fold in the chopped mini chocolate eggs to give extra chocolate delight in every bite.
  6. Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
  7. Press a few extra mini chocolate eggs on top of each brownie bite for a fun, festive touch.
Baking
  1. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. Let the brownie bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Serve with vanilla ice cream, fresh berries, or whipped cream. Store leftovers in an airtight container for up to 3 days at room temperature.
