Preparation
- Line an 8x8 inch baking pan with parchment paper, allowing some overhang.
- In a food processor, add the mixed nuts and pulse until coarsely chopped.
- Add the pitted dates into the food processor and blend until the mixture starts to stick together.
- Add the dark chocolate chips and coconut oil, blending until evenly mixed.
- Sprinkle in the sea salt and pulse once more to distribute.
- Scoop the mixture into the prepared baking pan and press down firmly into an even layer.
- Place the pan in the refrigerator for at least 1-2 hours to firm up.
- Once set, lift the bars out of the pan using the parchment paper overhang and cut into squares or rectangles.
Notes
For texture variations, consider adding dried fruits like cranberries or apricots. If making a double batch, you can freeze some for later. Do not rush the chilling process for better consistency.
