Method
 

Cooking the Oats
  1. In a medium saucepan, bring 2 cups of milk to a gentle boil.
  2. Add the rolled oats and a pinch of salt.
  3. Reduce the heat and let it simmer for about 5 minutes, stirring occasionally, until the oats are tender.
Preparing the Custard Mixture
  1. In a separate bowl, whisk together the eggs, sugar, and vanilla extract until smooth.
Combining
  1. Slowly mix the custard mixture into the cooked oats.
  2. Stir continuously over low heat for an additional 3-5 minutes until the oats have absorbed the custard and everything is thick and creamy.
Serving
  1. Once cooked, serve in bowls and top with your favorite fruits, nuts, or a drizzle of honey.

Notes

For a dairy-free option, use almond or coconut milk. Store leftovers in an airtight container in the fridge for up to four days. Reheat with a splash of milk.
