  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons curry powder Substitute with garam masala if desired.
  • 1 medium red bell pepper, diced
  • 1/2 medium red onion, diced
  • 1 cup cucumber, diced
  • 1/4 cup fresh cilantro, chopped Essential for freshness.
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice Add more for added zing.
  • to taste Salt and pepper Enhances all flavors.

Method
 

Preparation
  1. Rinse chickpeas under cold water to remove excess salt and drain well.
  2. In a large mixing bowl, combine drained chickpeas with curry powder, ensuring they are well-coated.
  3. Add diced red bell pepper, red onion, and cucumber to the bowl, contributing crunch and flavor.
  4. Chop fresh cilantro and sprinkle it into the bowl.
  5. Drizzle olive oil and lemon juice over the mixture and season with salt and pepper to taste.
  6. Gently toss all ingredients together to combine evenly, taking care not to mash the chickpeas.
  7. Taste and adjust seasonings if necessary, adding more salt or lemon juice.
  8. Serve immediately or chill in the fridge for about 30 minutes to meld flavors.

Notes

For best results, prepare a few hours beforehand to let the flavors blend. Store leftovers in an airtight container for up to 3 days.
