  • 2 large cucumbers, diced
  • 2 pcs sweet bell peppers (red and yellow for color), chopped
  • 1 small red onion, finely sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1 juiced lemon
  • 3 tablespoons olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Wash the cucumbers, bell peppers, and cherry tomatoes under cold water.
  2. Dice the cucumbers, chop the bell peppers, and slice the red onion thinly. Halve the cherry tomatoes.
Combine Ingredients
  1. In a large mixing bowl, combine the diced cucumbers, chopped bell peppers, sliced onion, halved cherry tomatoes, and parsley.
Make the Dressing
  1. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
Dress the Salad
  1. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
