Dressing

Method
 

Preparation
  1. Start by washing the cucumbers and strawberries. Slice the cucumbers into thin rounds and hull and slice the strawberries. If using red onion, thinly slice it as well.
  2. In a large mixing bowl, combine the sliced cucumbers, strawberries, and red onion (if using).
  3. Sprinkle the chopped mint leaves over the mixture for a refreshing aroma.
Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  2. Pour the dressing over the salad and gently toss everything together until well combined.
Serving
  1. Transfer the salad to a serving bowl or plate and enjoy immediately, or let it chill in the refrigerator for 30 minutes to enhance the flavors.

Notes

For best results, wait to dress the salad until just before serving to maintain the texture. Store leftovers in an airtight container in the refrigerator and consume within 2 days for optimal freshness.
