  • 2 large cucumbers, diced
  • 2 cups fresh strawberries, hulled and sliced

Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Preparation
  1. Wash the cucumbers and strawberries thoroughly. Dice the cucumbers into bite-sized pieces, and hull and slice the strawberries.
Mixing Ingredients
  1. In a large bowl, combine the diced cucumbers, sliced strawberries, and red onion. Optionally remove the skin from the cucumbers for a more delicate texture.
Add Herbs and Cheese
  1. Stir in the chopped mint leaves and feta cheese, if using.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
Dress the Salad
