Ingredients
  

For the Sandwich
  • 2 medium cucumbers, thinly sliced
  • 8 slices bread (white or whole grain)
  • 8 oz cream cheese, softened
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • to taste Fresh dill (optional, for garnish) For added flavor

Method
 

Preparation
  1. Rinse the cucumbers under cold water and slice them thinly (about 1/8 inch thickness). Set aside.
  2. In a mixing bowl, combine the softened cream cheese with salt and pepper. Mix until smooth and creamy, then fold in chopped fresh dill if using.
Assembly
  1. Take a slice of bread, spread a generous amount of the cream cheese mixture on one side, and layer 3 to 4 slices of cucumber on top.
  2. Place another slice of bread on top, pressing lightly to adhere.
Serving
  1. Cut the sandwiches into quarters or fingers and arrange them on a platter. Serve immediately for the best flavor.

Notes

For best results, assemble the sandwiches just before serving to keep them from getting soggy. Store leftovers in an airtight container in the refrigerator for up to 2 days.
