  • 1 large cucumber Thinly sliced
  • 8 slices bread White, whole wheat, or your preferred type
  • 8 ounces cream cheese Softened and at room temperature
  • Salt To taste
  • Pepper To taste
  • Fresh dill or chives Optional, for added flavor

Method
 

Preparation
  1. Lay out the slices of bread on a cutting board.
  2. Evenly spread a generous layer of cream cheese on one side of each bread slice.
  3. Using a sharp knife, slice the cucumber thinly—about 1/8 inch thick is ideal.
  4. Place cucumber slices over the cream cheese on half of the bread slices. Sprinkle with salt and pepper.
  5. Top with the remaining cream-cheese-coated bread, cream cheese-side down, to create sandwiches.
  6. Cut the sandwiches into quarters or triangles, and remove the crusts for a more polished look if desired.
  7. Serve immediately as they are best enjoyed fresh.

Notes

Choose fresh bread for better texture. Make sandwiches close to serving time to avoid sogginess. Avoid using overly ripe cucumbers.
