Preparation
- Lay out the slices of bread on a cutting board.
- Evenly spread a generous layer of cream cheese on one side of each bread slice.
- Using a sharp knife, slice the cucumber thinly—about 1/8 inch thick is ideal.
- Place cucumber slices over the cream cheese on half of the bread slices. Sprinkle with salt and pepper.
- Top with the remaining cream-cheese-coated bread, cream cheese-side down, to create sandwiches.
- Cut the sandwiches into quarters or triangles, and remove the crusts for a more polished look if desired.
- Serve immediately as they are best enjoyed fresh.
Notes
Choose fresh bread for better texture. Make sandwiches close to serving time to avoid sogginess. Avoid using overly ripe cucumbers.
