Ingredients

  • 2 medium cucumbers, diced Wash and peel before dicing.
  • 1 cup feta cheese, crumbled Can substitute with crumbled goat cheese.
For the Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed) Freshly squeezed provides better flavor.
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste Be careful not to over-salt due to feta's inherent saltiness.

  1. Start by washing and peeling the cucumbers. Dice them into bite-sized pieces and place them in a medium mixing bowl.
  2. Crumble the feta cheese over the cucumbers. The creamy texture of the feta will blend beautifully with the crispness of the cucumbers.
  3. In a separate small bowl, combine the olive oil, lemon juice, minced garlic, and dried oregano. Whisk them together until fully combined.
  4. Pour the vinaigrette over the cucumber and feta mixture. Toss gently to coat all the ingredients evenly.
  5. Sprinkle some salt and pepper to taste. Give it one last toss and let it sit for a few minutes to allow the flavors to meld.
