  • 1 piece cucumber, sliced Wash and slice thinly into rounds or half-moons.
  • 2 pieces carrots, shredded Wash and peel if desired, then shred into fine strands.
  • 2 tablespoons chia seeds Adds a nutty flavor and texture.
  • 1 tablespoon olive oil Can substitute with avocado oil.
  • 1 tablespoon lemon juice Freshly squeezed is best for flavor.
  • to taste Salt Add according to preference.
  • to taste Pepper Add according to preference.

Method
 

Preparation
  1. Start by washing the cucumber and carrots thoroughly. Peel the carrots if desired, then cut the cucumber into thin rounds or half-moons. Shred the carrots into fine strands, or cut them into matchsticks for a different texture.
Combine the Base
  1. In a large mixing bowl, combine the cucumber slices and shredded carrots.
Add Chia Seeds and Dressing
  1. Sprinkle the chia seeds over the veggies. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well blended. Pour the dressing over the salad.
Toss and Serve
  1. Gently toss the salad until all the ingredients are well combined and coated with the dressing. Let it sit for around 10 minutes to allow the chia seeds to absorb some moisture and expand.

Notes

For optimal freshness, prepare the salad just before serving. It can be stored in an airtight container in the fridge for 2 to 3 days. Avoid freezing as it will make the cucumbers lose their crunch.
