Ingredients
  

Main Ingredients
  • 2 medium cucumbers, diced
  • 2 ripe avocados, diced Make sure they are perfectly ripe.
  • 1 medium red onion, finely chopped
  • 1 tablespoon fresh lime juice Adjust to taste.
  • 2 tablespoons extra virgin olive oil Adjust to taste.
  • Salt and pepper, to taste
  • Optional: fresh cilantro or parsley for garnish

Method
 

Preparation
  1. Wash the cucumbers and avocados. Dice the cucumbers into bite-sized pieces and scoop out the avocados, cutting them into similar-sized pieces. Finely chop the red onion.
Mixing
  1. In a large mixing bowl, combine the diced cucumbers, avocados, and red onion.
Dressing
  1. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Drizzle this mixture over the salad.
Tossing
  1. Gently toss the salad using a spatula until everything is well coated. Be careful not to mash the avocados!
Serving
  1. Garnish with chopped cilantro or parsley if using, and serve immediately for the best flavor and freshness.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. It’s best served fresh, so only make as much as you’ll consume in one sitting. Reheating isn’t necessary.
