- Wash the cucumbers and avocados. Dice the cucumbers into bite-sized pieces and scoop out the avocados, cutting them into similar-sized pieces. Finely chop the red onion.

- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Drizzle this mixture over the salad.
Tossing
- Gently toss the salad using a spatula until everything is well coated. Be careful not to mash the avocados!

- Garnish with chopped cilantro or parsley if using, and serve immediately for the best flavor and freshness.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. It’s best served fresh, so only make as much as you’ll consume in one sitting. Reheating isn’t necessary.
