  • 4 cups fresh spinach, chopped You can use fresh or thawed frozen spinach.
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for greasing the pan

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a pie dish or baking pan with olive oil.
  2. Wash and chop the fresh spinach, ensuring to strain any liquid if using thawed frozen spinach.
  3. In a large bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, and Parmesan cheese. Add the eggs, garlic powder, salt, and pepper, then mix until well combined.
  4. Pour the mixture into the greased pie dish and spread it evenly.
Baking
  1. Place the dish in the preheated oven and bake for 35-40 minutes, until the pie is set in the center and golden brown around the edges. A toothpick inserted into the center should come out clean.
Serving
  1. Allow to cool for a few minutes before slicing. Serve warm.

Notes

For variations, use different cheeses like feta. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
