Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until it becomes light and fluffy (about 3-4 minutes).
- Beat in the pumpkin puree and eggs until well-combined.
- In another bowl, whisk together the all-purpose flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, gently fold in the white chocolate chips with a spatula.
- Using a cookie scoop or spoon, drop dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 12-15 minutes, or until the edges are light golden brown and the centers look set.
- Let them cool on the baking sheet for a few minutes before transferring to wire racks.
