Preparation
- Preheat your oven to 350°F (175°C) so it’s hot and ready for your cookies.
- In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until fluffy (about 2-3 minutes).
- Beat in the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Gently fold in the rolled oats until evenly incorporated into the dough.
Baking
- Using a cookie scoop or tablespoon, drop evenly sized balls of dough onto a parchment-lined baking sheet, leaving enough space between each cookie to allow for spreading.
- Place the baking sheet in the oven and bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, drizzle your icing over the top.

Notes
For a dairy-free option, replace unsalted butter with a plant-based alternative and use coconut sugar instead of brown sugar for a different flavor profile. Check cookies towards the end of baking as they may appear undercooked when the time is up, but will firm up as they cool. Overmixing may result in dry cookies.
