  • 4 large croissants Fresh, high-quality croissants are best.
  • 6 large eggs
  • 1 cup shredded cheese Cheddar or your favorite type.
  • Salt and pepper To taste
  • 1 tablespoon butter For cooking eggs.
Optional toppings
  • fresh spinach Optional, can be used for a healthier sandwich.
  • tomatoes Optional.
  • any other favorite veggies Customize to your taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Slice the croissants in half horizontally, keeping them attached on one side.
  2. In a bowl, crack the eggs and whisk them with salt and pepper until well combined.
Cooking
  1. In a skillet over medium heat, melt the butter. Pour in the egg mixture and gently stir until the eggs are fluffy and set (about 3-4 minutes). Remove from heat.
Assembly
  1. Place a generous portion of scrambled eggs onto the bottom half of each croissant. Sprinkle the shredded cheese on top, followed by your choice of fresh spinach or tomatoes.
  2. Close each croissant and place them on a baking sheet. Bake in the preheated oven for about 5-7 minutes, until the croissants are warm and the cheese is melted.
Serving
  1. Remove from the oven and serve immediately, perhaps with a side of fruit.

Notes

For added texture, include crispy sliced avocado or crushed red pepper flakes. Store leftovers in an airtight container in the fridge for up to three days, reheating in the oven or microwave.
