Preparation
  1. Season the chicken thighs or breasts with a pinch of salt and pepper.
  2. In a mixing bowl, combine the Hawaiian BBQ sauce, crushed pineapple (with juice), soy sauce, minced garlic, and minced ginger. Stir to combine well.
Cooking
  1. Place the seasoned chicken into your crockpot and pour the sauce mixture over the top, ensuring the chicken is well-coated.
  2. Set the crockpot to low for 5-6 hours or on high for 3-4 hours.
  3. Once cooked, shred the chicken with two forks.
Serving
  1. Serve the shredded chicken over rice, on buns, or with a side of your favorite vegetables. Garnish with fresh cilantro if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for longer preservation. Reheat in the microwave or stovetop. Customize the sauce and avoid overfilling the crockpot for optimal results.
