Ingredients

Main Ingredients
  • 1.5 lbs beef stew meat (cut into bite-sized pieces)
  • 1 lb baby potatoes (halved)
  • 4 tbsp garlic butter
  • 1 onion (chopped)
  • 1 cup beef broth Can be substituted with chicken broth for a lighter option.
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method

Preparation
  1. Start by chopping your onion and halving the baby potatoes.
Cooking
  1. In a skillet over medium-high heat, add 1 tablespoon of garlic butter and let it melt. Quickly sear the beef stew meat until browned on all sides.
  2. In your crockpot, add the chopped onion, halved baby potatoes, browned beef, and beef broth. Season with salt and pepper to taste.
  3. Add the remaining garlic butter on top, allowing it to melt into everything while cooking.
  4. Set your crockpot on low for about 6-7 hours or high for 3-4 hours, depending on your schedule.
  5. Once done, garnish with fresh parsley if desired and serve with your favorite rice or bread on the side.

Notes

For maximum tenderness, cook on low. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat gently on the stove or in the microwave with a splash of beef broth.
