- Dice the onions, carrots, celery, and potatoes into bite-sized pieces.
Cooking
- Place the chicken breasts at the bottom of the crockpot and surround them with the carrots, celery, peas, onions, and potatoes.
- Sprinkle the thyme, garlic powder, onion powder, salt, and pepper over the top.
- Pour in the chicken broth, covering all ingredients well.
- Set the crockpot to low for 6 to 8 hours, or high for 3 to 4 hours, until the chicken is tender.
- Remove the chicken and shred it with two forks before returning it to the pot.
- Stir in the heavy cream and flour (if using), and let it cook for an additional 30 minutes on low.
- Ladle the soup into bowls and enjoy.
