  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 cup frozen peas
  • 1 medium onion, diced
  • 2 cups diced potatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup heavy cream
  • ½ cup all-purpose flour (optional for thickening) Can be omitted if a thinner soup is preferred.

Method
 

Preparation
  1. Dice the onions, carrots, celery, and potatoes into bite-sized pieces.
Cooking
  1. Place the chicken breasts at the bottom of the crockpot and surround them with the carrots, celery, peas, onions, and potatoes.
  2. Sprinkle the thyme, garlic powder, onion powder, salt, and pepper over the top.
  3. Pour in the chicken broth, covering all ingredients well.
  4. Set the crockpot to low for 6 to 8 hours, or high for 3 to 4 hours, until the chicken is tender.
  5. Remove the chicken and shred it with two forks before returning it to the pot.
  6. Stir in the heavy cream and flour (if using), and let it cook for an additional 30 minutes on low.
  7. Ladle the soup into bowls and enjoy.

Notes

Feel free to swap or add veggies like zucchini, corn, or green beans. For extra warmth, consider cayenne pepper or smoked paprika. Adjust seasoning to taste.
