  • 4 pieces boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes Liquid included
  • 1 cup shredded carrots
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish Optional

Method
 

Preparation
  1. Place the boneless, skinless chicken breasts in the bottom of your crockpot.
  2. Pour in the 4 cups of chicken broth.
  3. Add the can of diced tomatoes (liquid included).
  4. Toss in the shredded carrots, diced onions, and minced garlic.
  5. Sprinkle Italian seasoning, salt, and pepper over the top and give everything a gentle stir.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  2. Once cooked, remove the chicken, shred it using two forks, and return it to the crockpot.
  3. Stir in the heavy cream and grated Parmesan cheese until well combined.
  4. Adjust seasoning if desired and let it cook for an additional 15-30 minutes on low.
Serving
  1. Serve hot, garnished with fresh basil.
  2. Enjoy with crusty bread on the side!

Notes

To elevate the soup, you can use ground chicken or turkey instead. Make sure not to open the crockpot lid too frequently.
