Preparation
- Place the boneless, skinless chicken breasts in the bottom of your crockpot.
- Pour in the 4 cups of chicken broth.
- Add the can of diced tomatoes (liquid included).
- Toss in the shredded carrots, diced onions, and minced garlic.
- Sprinkle Italian seasoning, salt, and pepper over the top and give everything a gentle stir.
Cooking
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once cooked, remove the chicken, shred it using two forks, and return it to the crockpot.
- Stir in the heavy cream and grated Parmesan cheese until well combined.
- Adjust seasoning if desired and let it cook for an additional 15-30 minutes on low.
Serving
- Serve hot, garnished with fresh basil.
- Enjoy with crusty bread on the side!
Notes
To elevate the soup, you can use ground chicken or turkey instead. Make sure not to open the crockpot lid too frequently.
