Preparation
- Start by dicing your carrots, celery, and onion. Set them aside.
Cooking
- Place the chicken breasts at the bottom of your crockpot. On top of that, add the diced carrots, celery, and onion.
- Pour in the chicken broth. Sprinkle in the garlic powder and Italian seasoning. Don't forget to add salt and pepper to your taste.
- Cover the crockpot and cook on low for 6 hours or high for 3 hours.
- After the cooking time, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot.
- Add the uncooked gnocchi to the soup. Cook for an additional 30 minutes on high.
- Stir in the heavy cream or milk and add the fresh spinach. Let it sit for another 10 minutes to allow the spinach to wilt.
- Serve warm with your favorite bread or a side salad.
Notes
For best results, allow for at least 6-7 hours on low for flavors to develop. Avoid overcooking the gnocchi by adding them in the last 30 minutes.
