  • 1 pound boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup gnocchi
  • 2 cups spinach Fresh spinach adds vibrant color and nutrition.
  • 1 cup heavy cream or milk For a lighter version, use low-fat milk or dairy-free alternatives.

Method
 

Preparation
  1. Start by dicing your carrots, celery, and onion. Set them aside.
Cooking
  1. Place the chicken breasts at the bottom of your crockpot. On top of that, add the diced carrots, celery, and onion.
  2. Pour in the chicken broth. Sprinkle in the garlic powder and Italian seasoning. Don't forget to add salt and pepper to your taste.
  3. Cover the crockpot and cook on low for 6 hours or high for 3 hours.
  4. After the cooking time, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot.
  5. Add the uncooked gnocchi to the soup. Cook for an additional 30 minutes on high.
  6. Stir in the heavy cream or milk and add the fresh spinach. Let it sit for another 10 minutes to allow the spinach to wilt.
  7. Serve warm with your favorite bread or a side salad.

Notes

For best results, allow for at least 6-7 hours on low for flavors to develop. Avoid overcooking the gnocchi by adding them in the last 30 minutes.
