  • 2 cups uncooked rice
  • 4 pieces boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1 cup frozen mixed vegetables
  • 1 medium onion, chopped

Preparation
  1. Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Sprinkle chopped onion and frozen mixed vegetables over the chicken.
  3. In a separate bowl, combine the cream of chicken soup and chicken broth. Stir until well combined, then pour over the chicken and vegetables. Season with salt and pepper.
  4. Add the uncooked rice to the top of the mixture without stirring to prevent the rice from becoming mushy.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or on high for about 3-4 hours until the chicken is fully cooked and the rice is tender.

Notes

Timing is key to avoid overcooked rice or undercooked chicken. Feel free to use brown rice or quinoa as a healthier alternative; adjust liquid and cooking time accordingly. Avoid lifting the lid frequently to maintain cooking time and texture.
