  • 2 lbs chicken breast, cubed
  • 1 cup cashews
  • 1 cup bell peppers, chopped (red or green)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
Sauce Ingredients
  • 1 cup soy sauce (ensure it’s Halal)
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch
For Serving
  • Salt and pepper to taste
  • Cooked rice for serving

Method
 

Preparation
  1. Wash and chop your bell peppers, onion, and mince the garlic.
  2. Cube your chicken breast into bite-sized pieces.
Cooking
  1. In the crockpot, layer the cubed chicken, chopped bell peppers, onion, and minced garlic.
  2. In a separate bowl, whisk together the soy sauce, honey, rice vinegar, and water.
  3. Mix the cornstarch with a bit of water to create a slurry and stir it into your sauce.
  4. Pour the sauce over the chicken mixture, and season it with salt and pepper.
  5. Set your crockpot on low and cook for 4-6 hours or on high for 2-3 hours.
  6. About 20 minutes before serving, stir in the cashews.
Serving
  1. Fluff up some cooked rice and serve this aromatic dish over it.

Notes

For ingredient substitutions, you can swap chicken for tofu or shrimp, but adjust cooking times accordingly. Avoid over-salting, as soy sauce adds saltiness.
