Preparation
- In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft. Drain excess fat.
- Transfer the beef mixture to your crock pot. Add chopped bell peppers, uncooked rice, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
Cooking
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours. The rice will soak up all those incredible flavors!
Serving
- Once cooked, stir well and enjoy hot, garnished with cheese, sour cream, or fresh herbs.
Notes
This soup stores beautifully; cool before transferring to an airtight container. It will keep fresh in the refrigerator for up to 4 days or frozen for up to 3 months. When reheating, add a splash of broth or water if it becomes thick.
