  • 2 lbs boneless, skinless chicken breast
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 8 oz penne pasta
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Method
 

Preparation
  1. Place chicken breasts at the bottom of the crock pot. Season them with salt, pepper, and Cajun seasoning.
  2. Throw in the chopped onion and minced garlic over the chicken.
  3. Pour in the heavy cream and chicken broth. Then, add the canned diced tomatoes on top.
Cooking
  1. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is cooked through and tender.
  2. About 30 minutes before serving, cook the penne pasta according to package instructions and drain.
  3. Once the chicken is done, shred the chicken using two forks and stir in the cooked pasta until well combined.
  4. Adjust seasoning as necessary.
Serving
  1. Serve immediately, garnished with fresh parsley for that extra pop of flavor and color.

Notes

Store leftovers in an airtight container for up to 3-4 days, or freeze individual portions for up to 2 months. Reheat with a splash of chicken broth to revive creaminess.
