Preparation
- Place chicken breasts at the bottom of the crock pot. Season them with salt, pepper, and Cajun seasoning.
- Throw in the chopped onion and minced garlic over the chicken.
- Pour in the heavy cream and chicken broth. Then, add the canned diced tomatoes on top.
Cooking
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is cooked through and tender.
- About 30 minutes before serving, cook the penne pasta according to package instructions and drain.
- Once the chicken is done, shred the chicken using two forks and stir in the cooked pasta until well combined.
- Adjust seasoning as necessary.
Serving
- Serve immediately, garnished with fresh parsley for that extra pop of flavor and color.
Notes
Store leftovers in an airtight container for up to 3-4 days, or freeze individual portions for up to 2 months. Reheat with a splash of chicken broth to revive creaminess.
