  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • to taste salt and pepper
  • 2 cups spinach (optional)

Preparation
  1. Begin by dicing the onion and slicing the carrots. Cut the chicken breast into bite-sized pieces for even cooking.
  2. In your slow cooker, start by adding the diced onions and sliced carrots. These will create a flavor base for your stew.
  3. Place the chicken breast pieces on top of the vegetables. This layering helps incorporate all the flavors as they cook.
  4. Sprinkle the garlic powder, thyme, salt, and pepper over the chicken. Use your hands or a spoon to mix ingredients gently.
  5. Add the chicken broth into the pot until all ingredients are covered.
Cooking
  1. Cover your slow cooker and set it on low heat for 6-8 hours or on high for 3-4 hours. This gives the chicken time to become tender and the flavors to blend beautifully.
  2. In the last 30 minutes, add the pierogies and spinach (if using) to the pot, stirring them in gently. Cook for the final 30 minutes until everything is heated through.
