  • 1 lb ground beef Choose Halal ground beef for dietary compliance.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup milk Add about 30 minutes before serving.
  • 2 cups shredded cheddar cheese Mix in towards the end to melt.
  • Salt and pepper to taste

Preparation
  1. Dice the onion, garlic, potatoes, carrots, and celery. Have everything ready to go.
Cooking
  1. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat if necessary.
  2. In your slow cooker, combine the browned beef, diced onion, garlic, beef broth, potatoes, carrots, and celery. Season with salt and pepper to taste.
  3. Set your Crock Pot on low and allow it to simmer for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the milk and shredded cheddar cheese, allowing it to melt.
Serving
  1. Ladle the soup into bowls and top with your favorite toppings like additional cheese or green onions if desired.

Notes

Store unused soup in an airtight container in the refrigerator for up to 3-4 days. Freeze for up to three months. When reheating, gently warm on the stovetop or in the microwave, adding a splash of milk if the soup thickens too much.
