Ingredients
  

Filling Ingredients
  • 1 small Cucumber (sliced)
  • 1 medium Carrot (julienned)
  • 0.5 cup Fresh herbs (mint, cilantro) Mixed
Sauce Ingredients
  • 4 tablespoons Soy Sauce
  • 2 tablespoons Honey or Sugar Use according to taste
  • 2 cloves Garlic (minced)
Other Ingredients
  • 8 sheets Rice Paper For wrapping
  • 1 tablespoon Sesame seeds (for garnish)

Method
 

Preparation
  1. Slice the cucumber and julienne the carrot. Set these fresh veggies aside in a bowl, ready for assembly.
  2. In a small bowl, whisk together the soy sauce, honey or sugar, and minced garlic to create the sauce.
Assembling the Boats
  1. Fill a shallow dish with warm water. Soften rice paper sheets by immersing them in warm water for 10-15 seconds.
  2. Lay the softened rice paper on a clean surface. Place a spoonful of cucumber and carrot mixture along one edge. Drizzle with sweet soy sauce and add fresh herbs.
  3. Fold the sides over the filling, then roll tightly to form a boat shape.
  4. For extra crunch, briefly pan-fry the finished boats in a small amount of oil until golden and crisp.
Serving
  1. Sprinkle sesame seeds on top and serve with remaining sweet soy sauce for dipping.

Notes

You can substitute rice paper with thinly sliced lettuce leaves for a refreshing wrap. If preparing ahead, store the filling and sauce separately, and assemble just before serving. Avoid over-soaking the rice paper, and do not overfill the boats.
