Preparation
- Slice the cucumber and julienne the carrot. Set these fresh veggies aside in a bowl, ready for assembly.
- In a small bowl, whisk together the soy sauce, honey or sugar, and minced garlic to create the sauce.
Assembling the Boats
- Fill a shallow dish with warm water. Soften rice paper sheets by immersing them in warm water for 10-15 seconds.
- Lay the softened rice paper on a clean surface. Place a spoonful of cucumber and carrot mixture along one edge. Drizzle with sweet soy sauce and add fresh herbs.
- Fold the sides over the filling, then roll tightly to form a boat shape.
- For extra crunch, briefly pan-fry the finished boats in a small amount of oil until golden and crisp.
Serving
- Sprinkle sesame seeds on top and serve with remaining sweet soy sauce for dipping.
Notes
You can substitute rice paper with thinly sliced lettuce leaves for a refreshing wrap. If preparing ahead, store the filling and sauce separately, and assemble just before serving. Avoid over-soaking the rice paper, and do not overfill the boats.
