Ingredients
Method
Preparation
- Butterfly or flatten chicken breasts for even cooking. Season both sides with salt and pepper.
Egg Wash
- Beat the eggs in one bowl. In a separate bowl, combine breadcrumbs and grated Parmesan cheese.
Coating
- Dip each chicken breast in egg wash, ensuring full coverage. Then transfer to the breadcrumb mix, pressing gently to adhere.
Fry
- Heat about a quarter-inch of olive oil in a skillet over medium heat. Once hot, add coated chicken breasts in batches. Fry for 4-5 minutes per side until golden brown and crispy.
Drain
- Remove chicken from skillet and place on paper towels to drain excess oil.
Serve
- Serve hot with a side of your choice, drizzle with fresh lemon juice, and enjoy!
Notes
For a healthier option, consider baking the chicken at 400°F (200°C) for 20-25 minutes instead of frying.
