  • 4 pieces chicken breasts Butterfly or flatten if thick
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs Can be gluten-free if desired
  • 2 pieces eggs For the egg wash
  • to taste Salt and pepper
  • for frying as needed Olive oil

Method
 

Preparation
  1. Butterfly or flatten chicken breasts for even cooking. Season both sides with salt and pepper.
Egg Wash
  1. Beat the eggs in one bowl. In a separate bowl, combine breadcrumbs and grated Parmesan cheese.
Coating
  1. Dip each chicken breast in egg wash, ensuring full coverage. Then transfer to the breadcrumb mix, pressing gently to adhere.
Fry
  1. Heat about a quarter-inch of olive oil in a skillet over medium heat. Once hot, add coated chicken breasts in batches. Fry for 4-5 minutes per side until golden brown and crispy.
Drain
  1. Remove chicken from skillet and place on paper towels to drain excess oil.
Serve
  1. Serve hot with a side of your choice, drizzle with fresh lemon juice, and enjoy!

Notes

For a healthier option, consider baking the chicken at 400°F (200°C) for 20-25 minutes instead of frying.
