Preparation
- Preheat your oven to 400°F (200°C). If your chicken breasts are thick, pound them to ensure even cooking. Season with salt and pepper on both sides.
- Set out three shallow bowls. In the first bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, and a pinch of salt. In the second bowl, beat the eggs. Leave the third bowl empty.
Breading the Chicken
- Dip each chicken breast into the empty bowl first (the dry bowl), then into the beaten eggs, and finally into the breadcrumb mixture, ensuring it’s well coated.
Frying and Baking
- Heat a couple of tablespoons of cooking oil in a large skillet over medium-high heat. Once hot, place the breaded chicken breasts in the skillet. Cook for about 4-5 minutes per side or until golden brown.
- Transfer the chicken to a baking sheet and place it in the preheated oven. Bake for an additional 10-15 minutes until the chicken is cooked through (internal temp should reach 165°F or 75°C).
- After baking, let the chicken rest for a couple of minutes before slicing and serving. Pair with your favorite sides.
Notes
For perfect crispy chicken, ensure cooking oil is hot before adding the chicken. Experiment with flavors by adding herbs or spices to the breadcrumb mixture. Store leftovers in an airtight container in the fridge for 3-4 days.
