Preparation
- Peel the onions and slice them into about ½-inch thick rings, separating the rings as needed for frying.
- In one bowl, beat the eggs and season with a pinch of salt and pepper.
- In a separate bowl, mix the almond flour, grated Parmesan cheese, garlic powder, paprika, and a bit more salt and pepper.
Cooking
- Dip each onion ring into the egg mixture, letting any excess drip off, then coat thoroughly in the almond flour mixture, ensuring the ring is well covered.
- Heat oil in a frying pan over medium heat, ensuring enough oil to lightly submerge the bottom of the pan.
- Carefully place the coated rings into the hot oil, frying in batches for about 2-3 minutes per side or until golden brown and crispy.
- Once fried, use a slotted spoon to remove the onion rings and place them on a paper towel-lined plate to drain any excess oil. Serve hot.
Notes
For substitutions, try flaxseed meal for a nut-free version or add herbs for extra flavor. Ensure oil is hot before adding rings to avoid sogginess. Fry in batches to maintain oil temperature.
