  • 1 cup almond flour Alternative: flaxseed meal for a nut-free version.
  • 1 cup grated Parmesan cheese
  • 2 large eggs Beaten for the egg mixture.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper To season the egg and flour mixtures.

  1. Peel the onions and slice them into about ½-inch thick rings, separating the rings as needed for frying.
  2. In one bowl, beat the eggs and season with a pinch of salt and pepper.
  3. In a separate bowl, mix the almond flour, grated Parmesan cheese, garlic powder, paprika, and a bit more salt and pepper.
Cooking
  1. Dip each onion ring into the egg mixture, letting any excess drip off, then coat thoroughly in the almond flour mixture, ensuring the ring is well covered.
  2. Heat oil in a frying pan over medium heat, ensuring enough oil to lightly submerge the bottom of the pan.
  3. Carefully place the coated rings into the hot oil, frying in batches for about 2-3 minutes per side or until golden brown and crispy.
  4. Once fried, use a slotted spoon to remove the onion rings and place them on a paper towel-lined plate to drain any excess oil. Serve hot.

Notes

For substitutions, try flaxseed meal for a nut-free version or add herbs for extra flavor. Ensure oil is hot before adding rings to avoid sogginess. Fry in batches to maintain oil temperature.
