  • 1 pound Cod fillets Fresh or thawed
  • 1 cup Buttermilk For marinating
For the Breading
  • 1 cup All-purpose flour
  • ½ cup Cornmeal
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
  • for frying amount Vegetable oil Approximately 1 inch in skillet
For Assembly
  • 4 pieces Sandwich rolls Any type of your choice
  • to taste Your choice of toppings Lettuce, tomato, tartar sauce, pickles, etc.

Preparation
  1. Marinate the Cod: Begin by marinating the cod fillets in buttermilk for at least 15 minutes.
  2. Prepare the Breading: In one bowl, whisk together flour, cornmeal, paprika, salt, and pepper.
Frying
  1. Heat the Oil: In a large skillet, heat about an inch of vegetable oil over medium heat until it reaches around 350°F (175°C).
  2. Bread the Fish: Take the marinated cod fillets out of buttermilk, dip them into the flour mixture, and shake off any excess flour.
  3. Fry: Carefully place the breaded cod into the hot oil, cooking for about 3-4 minutes on each side or until golden brown.
Assembly
  1. Assemble the Sandwich: Remove cod from the oil and place on paper towels to drain. Toast sandwich rolls if desired. Add crispy cod and your favorite toppings.
