Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the cooked meat (or beans), sliced bell pepper, sliced onion, shredded cheese, and taco seasoning together. Make sure everything is well combined.
- Lay one tortilla flat on a sheet of aluminum foil. Spoon a quarter of the filling onto one half of the tortilla. Fold the other half over to create a half-moon shape.
- Carefully fold the aluminum foil around the quesadilla, sealing it well to keep the heat in. Repeat this for the remaining tortillas and filling.
- Place the foil packets in the preheated oven and bake for about 20 minutes. After 20 minutes, carefully unwrap one to check—if the tortilla is crispy and the cheese is melted, you’re ready to go.
- Let cool for a moment, then unwrap and serve with your favorite toppings like salsa, sour cream, or guacamole.
Notes
For best results, seal the foil packets tightly to enhance crispiness. Store leftovers in an airtight container and reheat in the oven wrapped in foil to maintain crispiness.
