Preparation
- Preheat the oven to 400°F (200°C).
- Grease a muffin tin with olive oil.
- Cook the beef sausage in a skillet over medium heat until browned and fully cooked. Chop into small pieces.
- If not using prepared mashed potatoes, boil potatoes until tender, then mash with salt, pepper, and a splash of cream.
Assembly and Cooking
- In each muffin tin cup, layer a spoonful of cooked sausage followed by a mound of mashed potatoes.
- If using cheese, sprinkle it over the top of the mashed potatoes.
- Bake in the preheated oven for 20-25 minutes until golden brown and crispy.
- Allow to cool slightly, then carefully remove from the muffin tin and serve hot.
