Ingredients

  • 1 pound beef sausage
  • 2 cups mashed potatoes Prepared or store-bought
  • 1 cup shredded cheese Optional
  • to taste salt and pepper
  • as needed olive oil For greasing the muffin tin

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Grease a muffin tin with olive oil.
  3. Cook the beef sausage in a skillet over medium heat until browned and fully cooked. Chop into small pieces.
  4. If not using prepared mashed potatoes, boil potatoes until tender, then mash with salt, pepper, and a splash of cream.
Assembly and Cooking
  1. In each muffin tin cup, layer a spoonful of cooked sausage followed by a mound of mashed potatoes.
  2. If using cheese, sprinkle it over the top of the mashed potatoes.
  3. Bake in the preheated oven for 20-25 minutes until golden brown and crispy.
  4. Allow to cool slightly, then carefully remove from the muffin tin and serve hot.

Notes

Customize with different sausages or toppings. Great for meal prep!
