Ingredients
  

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning mix or homemade
  • 1/3 cup water
  • 1/2 cup canned black beans optional
  • 1/2 cup corn kernels optional
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/2 avocado diced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • Sliced jalapeños optional

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 400°F (200°C). This ensures your potatoes will develop that delightful crispy skin.
  • Prepare Potatoes: Scrub the russet potatoes clean and then pat them dry. Prick each potato with a fork, rub with olive oil, and sprinkle generously with salt and pepper.
  • Bake Potatoes: Place the potatoes directly on the oven rack and bake for about 45–55 minutes, or until they are tender inside and have a beautifully crispy exterior.
  • Cook Taco Filling: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey, cooking until browned. Drain any excess fat.
  • Season the Meat: Stir in the taco seasoning and water, then let it simmer for 5 minutes. If you're using black beans or corn, add them at this stage for extra flavor.
  • Prepare Potatoes for Filling: When the potatoes are done baking, remove them from the oven. Carefully slice them open and fluff the insides gently with a fork.
  • Load the Potatoes: Spoon the taco meat into each potato, then top generously with shredded cheese. You can return the potatoes to the oven for 3–5 minutes if you like melty cheese!
  • Finish with Toppings: Finally, add your desired toppings like sour cream, salsa, diced avocado, green onions, cilantro, and jalapeños.
