Ingredients

For the Fish
  • 4 pieces 6-ounce fillets of your choice of white fish (cod, tilapia, or haddock)
  • 1 cup breadcrumbs (preferably panko for extra crispiness) Panko breadcrumbs are recommended for a crunchier texture.
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 large eggs For egg wash.
  • 2 tablespoons olive oil
  • 1 slices Lemon wedges, for serving Serves as a fresh garnish.

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well to ensure even distribution of flavors.
  3. In another bowl, whisk the eggs together and add the olive oil to help the breadcrumbs stick to the fish.
  4. Dip each fillet into the egg mixture, allowing the excess to drip off before coating it in the breadcrumb mixture. Press the breadcrumbs onto the fish to create a solid coating.
  5. Place the coated fillets on the prepared baking sheet. Bake for about 15-20 minutes, or until the fish is cooked through and the coating is golden brown.
  6. Serve immediately with lemon wedges on the side.

Notes

For an even crispier coating, use panko breadcrumbs instead of regular ones. Ensure fish is fully thawed before cooking for optimal texture. Avoid crowding the baking sheet to ensure even browning.
