Preparation
- Preheat your oven to 425°F (220°C).
- Rinse the asparagus under cold water and trim off the woody ends.
- In one bowl, place the flour. In a second bowl, add the beaten eggs. In a third bowl, mix your seasoned breadcrumbs with garlic powder, onion powder, salt, and black pepper.
- Dip each asparagus spear into the flour, shaking off any excess. Next, coat it in the egg mixture, and finally roll it in the breadcrumb mixture.
- Line a baking sheet with parchment paper and place the coated asparagus fries in a single layer. Drizzle them lightly with olive oil.
Baking
- Place the baking sheet in the oven and bake for about 15-20 minutes or until golden brown and crispy.
- Flip them halfway through for even cooking.
Serving
- Once they’re out of the oven, allow them to cool for a minute. If desired, sprinkle with grated parmesan before serving.
- Grab your favorite dipping sauce, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 5-10 minutes.
