  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour Can substitute with cake flour if needed.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup heavy cream Can substitute with non-dairy alternatives.
  • granulated sugar for topping Sprinkle on top before baking.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in the eggs, one at a time, followed by the tablespoon of vanilla extract, ensuring everything is well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually mix this dry combination into the wet ingredients, blending until you have a smooth cookie dough.
  5. Gently fold in the heavy cream.
  6. Use a tablespoon or cookie scoop to portion the dough onto a parchment-lined baking sheet, leaving space between each cookie.
  7. Sprinkle a thin layer of granulated sugar on top of each cookie.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra caramelized effect, you can use a kitchen torch to lightly char the sugar topping. Chilling the dough for 30 minutes before baking can help cookies maintain their shape.
