Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon vanilla bean paste for extra richness
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For Caramelizing
  • 1/4 cup granulated sugar for caramelizing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and vanilla bean paste until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt, then gradually add this to the wet mixture until incorporated.
  5. Using a cookie scoop or tablespoon, portion out the dough onto prepared baking sheets, leaving space between each scoop.
Baking
  1. Bake for 10-12 minutes or until the edges start to turn golden.
  2. Immediately sprinkle granulated sugar on top of each cookie while they are warm, then use a kitchen torch to caramelize the sugar until bubbly and golden brown.
Cooling
  1. Allow the cookies to cool completely before indulging.

Notes

For best results, use high-quality vanilla and keep a close eye on the baking time to ensure a chewy texture. Experiment with different sugar toppings for unique flavors.
