Ingredients
  

For the Eyeball Base
  • 1.5 cups vanilla ice cream, softened Ensure the ice cream is softened for easier scooping.
  • 1/2 cup chocolate sauce For binding the cookie base.
  • 12 large marshmallows These will be placed on top of the ice cream.
For Decoration
  • 12 M&Ms or Skittles To use as the pupils of the eyeballs.
  • 1/2 cup edible eyes (optional) For added decoration.
  • 1 cup crushed cookies or crumbs To create the eye socket base.
  • candy corn For additional decoration.

Method
 

Preparation
  1. In a bowl, mix the crushed cookies or crumbs with a bit of melted chocolate sauce to create a moldable base.
  2. Shape the mixture into small, sturdy mounds on a parchment-lined tray and let set in the freezer for about 10 minutes.
Assembly
  1. While the cookie bases are cooling, scoop the softened vanilla ice cream into balls about the size of a golf ball.
  2. Place a large marshmallow on top of each ice cream scoop and ensure they stick well.
Decoration
  1. Drizzle chocolate sauce over each eyeball to create the illusion of veins or creepy details.
  2. Place an M&M or Skittle in the center of each marshmallow to represent the pupil. Optionally, include edible eyes around the cookie base.
Serving
  1. Serve immediately or keep in the freezer until ready to serve.

Notes

For intricate shapes, consider using silicone molds. Feel free to experiment with different ice cream flavors and different candies for decoration. Keep the eyeballs chilled before serving to ensure they maintain their shape.
