  • 3 medium zucchinis, chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, add the olive oil and then the chopped zucchini. Cook for about 5-7 minutes or until the zucchini is softened and lightly golden.
  2. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Transfer the sautéed mixture into a blender or use an immersion blender in the skillet. Add the heavy cream, salt, and pepper. Blend until smooth and creamy.
  4. Pour the blended sauce back into the skillet over low heat. Stir in the grated Parmesan cheese until melted and well combined. Taste and adjust seasoning as necessary.
  5. Serve immediately with your choice of pasta, grilled chicken, or simply over fresh veggies.

Notes

For a lighter version, substitute some or all of the heavy cream with a plant-based alternative like cashew cream or coconut cream. Use an immersion blender directly in the skillet for easy blending. Taste-check your seasoning as you go.
