- In a large skillet over medium heat, add the olive oil and then the chopped zucchini. Cook for about 5-7 minutes or until the zucchini is softened and lightly golden.
- Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Transfer the sautéed mixture into a blender or use an immersion blender in the skillet. Add the heavy cream, salt, and pepper. Blend until smooth and creamy.
- Pour the blended sauce back into the skillet over low heat. Stir in the grated Parmesan cheese until melted and well combined. Taste and adjust seasoning as necessary.
- Serve immediately with your choice of pasta, grilled chicken, or simply over fresh veggies.
Notes
For a lighter version, substitute some or all of the heavy cream with a plant-based alternative like cashew cream or coconut cream. Use an immersion blender directly in the skillet for easy blending. Taste-check your seasoning as you go.
